Kohlrabi - Delicatesse, White (seeds)
Kohlrabi (Brassica oleracea var. gongylodes) is a unique and nutritious vegetable that’s often overlooked due to its unusual appearance. Here’s how to grow and care for Kohlrabi:
Planting
Choose a sunny location in your garden with well-draining soil. Kohlrabi prefers slightly acidic to neutral soil. Dress the soil with about 1 inch of compost before planting. While Kohlrabi isn’t a heavy feeder, this extra boost helps. Avoid planting Kohlrabi where other Brassica family vegetables (like broccoli or cabbage) have grown in the past 2-3 years to prevent disease spread and nutrient deficiencies.
Sowing Seeds
In spring, once soil temperatures reach at least 45°F (7°C), sow Kohlrabi seeds directly in the garden. Plant the seeds about 1/2 inch deep, spaced 1 inch apart in rows that are 18-24 inches apart. Keep the soil consistently moist during germination.
Growing
Kohlrabi needs plenty of sunlight, so ensure it receives at least 6 hours of direct sunlight daily. The stem of Kohlrabi is ready to harvest when it reaches roughly 2-3 inches in diameter. This usually occurs 45-60 days after planting. Remember to water regularly to keep the soil moist.
Harvesting
When harvesting, remove the outer tough layer with a vegetable peeler. The interior white flesh is sweet, tender, and has a crisp texture with a peppery flavor. Kohlrabi greens are also nutritious and can be used in salads or cooked.
Nutritional Value
Kohlrabi provides vitamins C, A, and K, as well as minerals like calcium, potassium, and iron. Both the stem and greens are rich in dietary fiber, aiding digestive health.
Remember, Kohlrabi is simple to grow, matures quickly (in as little as 6 weeks), and is generally pest-free. Give it a try!
